Liz's Pumpkin Pie Recipe
something my
children always requested coming up to Halloween when we prepared the
pumpkin heads – this is a dessert you can make with the insides. It’s
very simple and delicious.
Ingredients
6-8oz shortcrust pastry
2 eggs
4oz caster sugar
¼ tsp ground nutmeg
¼ tsp ground ginger
¼ tsp ground cinnamon
12oz cooked pumpkin (mashed or sieved)
4 tbsps. Milk
Method
* Whipped double cream (or any cream available for serving)
* Roll out the pastry and line a deep pie dish.
* Beat the eggs together with the sugar and sifted spices.
* Gradually add the pumpkin and the milk.
* Pour into the prepared pastry case.
* Bake at the top of a hot oven (425 degreesF or gas mark 7) for 15 mins, to set the pastry.
* Reduce the heat to moderate (350 degreesF or gas mark 4) and cook for a further 30 minutes, or until the filling is set.
* Serve just warm, topped with cream.
